I love blueberry muffins and single-serve recipes. That makes this single serve blueberry muffin in a mug recipe was a given, why have I not done this before? It is easy, so easy, probably one of my easiest mug recipes, and it’s filling. It really makes a delicious and easy breakfast for yourself.

This is a delicious and easy breakfast that you can make for yourself, quietly before your kids get up in the morning and you just want to enjoy a cup of coffee and wake up in peace.
What You Need:
- 1/4 cup flour
- 1 tbsp brown sugar
- 1/4 tsp baking powder
- 1/8 tsp salt
- 1/2 tbsp margarine
- 2 tbsp milk
- 1-2 tbsp frozen blueberries
How to make a Single Serve Blueberry Muffin in a Mug
Grab your favorite microwave-safe mug, I think I use the same one almost every time. We have two of these mugs, so I have one for my coffee, one for my mug breakfast.
Start by stirring together the flour, brown sugar, baking powder, and salt until it is well mixed.
Add the margarine to the mug and use your fingers to rub or smoosh them together until no large chunks of margarine remain and the mixture looks like damp sand. I use a fork because I do not melt my margarine for this.
Stir milk into the margarine/flour mixture.
It should now resemble a thick muffin batter. If it’s too dry, add a splash of more milk. Sprinkle blueberries over top and push them down into the batter.
Microwave on high for approximately 1 and a half minutes.
Enjoy with a drizzle of maple syrup over top.

- Stir the milk into the margarine/flour mixture. It should now resemble a thick muffin batter. If it’s too dry, add a splash of more milk.
- Fold blueberries into the batter, kind of push them into the batter.
- Microwave on high for approximately 1 and a half minutes.
- Enjoy with a drizzle of maple syrup over top if you'd like a little more sweetness.
For the photos of this recipe, I flipped the muffin out because I wanted to so you that you can eat it like a muffin, pick it up and eat it with your fingers if you’d like. I did not use a non-stick spray in my mug before making this.
This muffin is quite dense, I feel quite satisfied after eating in the morning with my cup (or 3) of coffee.
