Single Serve Snickerdoodle Cookie

The end of another week has come, and this week was the first week “back to school” here. Our first week of another homeschool year and I think I should reward myself with a sweet treat, a single serve dessert just for me. This single serve snickerdoodle cookie was begging me to enjoy it.

How to Make a Snickerdoodle Cookie Dessert for One

This is super easy to make, it take maybe one minute to mix up. Mix together your dry ingredients first in a small bowl.

Then add in your wet ingredients. I recommend using a small whisk instead of using a spoon. It will mix up much quicker.

Snickerdoodle Cookie Batter - quick desserts for one

Pour snickerdoodle batter into a microwave safe mug. I use non-stick spray to make it easier to eat out of the mug and to later clean the mug. No wasting even a single piece of this cookie.

Mix the topping, just sugar and cinnamon, in a small bowl. Sprinkle over the top of your batter.

How easy was that to make up to this point? Put it in the microwave for one and a half minute.

Remove from the microwave and let it sit for a minute or so, just to let it cool so you don’t burn your mouth trying to eat it.

This was my treat for making it through our first week of homeschooling in Nova Scotia. Not that there is a difference in our homeschooling style based on where we live.

I think everyone deserves a treat and the time to their self to relax, to just be still for a short time in a crazy world.
