The end of another week has come, and this week was the first week “back to school” here. Our first week of another homeschool year and I think I should reward myself with a sweet treat, a single-serve dessert just for me. This single serve snickerdoodle cookie was begging me to enjoy it.
Snickerdoodle Mug Cake – Dessert for One

What You Need:
Cookie Dough
- 1/4 cup of flour
- 2 tbsp of brown sugar
- 1/4 tsp of baking powder
- 1/4 tsp of cinnamon
- 1/2 tsp of vanilla
- 1/4 cup of milk
- 1 1/2 tbsp of margarine, melted
Cookie Topping
- 1 tbsp of white sugar
- 1/4 tsp of cinnamon
How to Make a Snickerdoodle Cookie Dessert for One
This is super easy to make, it takes maybe one minute to mix up. Mix together your dry ingredients first in a small bowl.
Then add in your wet ingredients. I recommend using a small whisk instead of using a spoon. It will mix up much quicker.
Pour snickerdoodle batter into a microwave-safe mug. I use non-stick spray to make it easier to eat out of the mug and to later clean the mug. Not wasting even a single piece of this cookie.
Mix the topping, just sugar, and cinnamon, in a small bowl. Sprinkle over the top of your batter.
How easy was that to make up to this point? Put it in the microwave for one and a half minutes.
Remove from the microwave and let it sit for a minute or so, just to let it cool so you don’t burn your mouth trying to eat it.

- Sprinkle on top of cookie batter.
- Microwave for 1 1/2 minutes.
- Let it cool for a few minutes before attempting to eat it.
