Vanilla Biscotti – Teething Biscuits

With December came a slight fever, crankiness and little sleep. Brookland’s slight fever hasn’t had me overly concerned me as it has been low. She is normally a very happy baby that naps well, and sleeps at night, only waking to nurse. This all lends us to believe she may be teething. So Momma got baking. Enter the vanilla biscotti.

Teething Biscuits
 
1/2 cup sugar
1 1/2 tbsp margarine
1 egg*
1/2 tsp baking powder
tiny pinch of salt
1 tsp vanilla
1-1 1/4 cup flour
 
Mix it all together, using just 1 cup of flour. If the dough is too sticky to mold with your hands add the 1/4 cup. (I did. )
Form into a 8″ long log place on greased cookie sheet. Bake for 20 mins at 350.
Let cool.

Slice your log into 2″ slices, getting about 16 slices. Bake 15-20 minutes, turning once. If they feel soft, to the touch bake for 5-10 minutes more. They harden as they cool. (I baked them the extra 10 minutes Just because I was nervous being her first finger/self feeding food.)
 
 
 
 
The look says it all. “What is this thing?” This is her first finger food/self feeding.
 
 

She loved it. Twisting herself sideways to get out of her bumbo when she dropped it on the floor.

* Please think about your baby’s age and chance of allergies as this includes an egg. My little one is just about 7 months, and I know she doesn’t have an allergy to egg.*
 
This Momma also loves these. And now that you can buy vanilla biscotti flavored coffee… well, let’s just say these aren’t great for my waist line!

Vanilla Biscotti

Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 1/2 cup sugar
