Back to school here has had me making breakfast once a week for my kiddos, something different than the normal toast. These Chocolate Peanut Butter Oatmeal Cups are perfect for making ahead of time and for on the go. We are loving oatmeal (baked) for breakfast lately. Something different to get our day started.
Chocolate Peanut Butter Oatmeal Cups

These are great for making ahead for a busy week of running your kids around and homeschooling. They are simple make, and store well in a container for grabbing on the go or for when you’re just sitting down to do something (lessons, work from home, etc) and your kids start asking for second breakfast.
You can either use muffin liners, I love these silicone muffin liners, or grease your muffin tins. I used a 1/4 cup to fill my muffin tins, these don’t rise so you can fill the cups up without fear of them pilling over.
What you need:
- 4 cups quick oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup mini semisweet chocolate chip
- 3 tablespoons peanut butter
- 2 cups milk
- 1 egg
- 1 tablespoon sugar
How to Make Peanut Butter Oatmeal Chocolate Chip Muffins:
Simply throw all of the following ingredients in a bowl and mix well to get your peanut butter oatmeal chocolate chip muffins for breakfast tomorrow.
Bake in preheated oven at 375 for 30 minutes.
You could easily substitute out the chocolate chips for raisins for a more healthy version of these. Or do a mixture of both. Maybe add some nuts or other dried fruit.
This recipe is super super easy. It could be the perfect recipe for having your kids make. If you haven’t started baking with your kids this is a great way to start.
They can learn so much cooking and baking. Math and language arts galore, as well as science, because it’s all about chemical reactions.
