Single Serve Cheese Baked Eggs

We have chickens, which means we have a great supply of eggs. I admit that I am not the biggest lover of eggs, I can only eat so many before I need to find some new ways to eat them. Cheese Baked Eggs are not a bad way to eat eggs. It is not a super quick recipe, but it sure is tasty.

What You Need:

  • 1 teaspoon salted butter , softened (or non-stick spray)
  • 2 large eggs
  • 2 tablespoons milk
  • 2 tablespoons shredded Cheddar cheese
  • 1 tablespoon Parmesan cheese
  • ⅛ teaspoon salt
  • ⅛ teaspoon freshly ground black pepper

How to Make Single Serve Cheese Baked Eggs

The eggs I used this morning while making these cheesy eggs for pictures were huge! Not a large egg but closer to extra-large.

I used some butter to “grease” my ramekin, but the non-stick spray would work just as well too, if not better. I’m just not the best at using butter for non-stick.

Crack two eggs into a small mixing bowl. Add your milk and whisk the eggs and milk together.

Whisk in some salt and pepper.

Grate some cheddar cheese into your bowl, about two tablespoons worth. I just eyed it, who is going to complain about extra cheese in their eggs? Also, add in some parmesan cheese.

Pour into your oven-safe dish.

Bake in a preheated oven at 400 for about 15 minutes in an oven-safe ramekin dish.

I think adding some bacon bits into the egg mixture before cooking would just take these cheese-baked eggs to over the top good. I wish I had some in the house but, we are currently bacon-free, not by choice, but due to not being close to a Costco.

Baking in the Oven or in the Air Fryer

I use my air fryer for smaller dishes like this because I don’t want to run my oven for something so small. When doing one of these up for all of us in the morning I use the oven. These make a great cool morning breakfast before we start our school day. Similar to our single serve blueberry oatmeal.

When using the air fryer it cooks in a shorter amount of time too which I always appreciate in the mornings.
