Single Serve Snickerdoodle Cookie

The end of another week has come, and this week was the first week “back to school” here. Our first week of another homeschool year and I think I should reward myself with a sweet treat, a single-serve dessert just for me.

What You Need:

– 1/4 cup of flour – 2 tbsp of brown sugar – 1/4 tsp of baking powder – 1/4 tsp of cinnamon – 1/2 tsp of vanilla – 1/4 cup of milk – 1 1/2 tbsp of margarine, melted

– 1 tbsp of white sugar – 1/4 tsp of cinnamon

This is super easy to make, it takes maybe one minute to mix up. Mix together your dry ingredients first in a small bowl.

Then add in your wet ingredients. I recommend using a small whisk instead of using a spoon. It will mix up much quicker.

Pour snickerdoodle batter into a microwave-safe mug.  I use non-stick spray to make it easier to eat out of the mug and to later clean the mug. Not wasting even a single piece of this cookie.

Mix the topping, just sugar, and cinnamon, in a small bowl. Sprinkle over the top of your batter.

Put it in the microwave for one and a half minutes. Remove from the microwave and let it sit for a minute or so, just to let it cool so you don’t burn your mouth trying to eat it.
