This single serve coconut mug cake was easy to make, and the best part for me is that it isn’t overly sweet. Just because we want a sweet treat doesn’t mean we want to overload on sugar.
– 1/4 cup all-purpose flour – 2 tablespoons granulated sugar – 2 tablespoons unsweetened shredded coconut – 1/4 teaspoon baking powder – 1/4 cup milk – I use almond milk – 2 tablespoons coconut oil
In a small microwave-safe bowl, combine all ingredients and stir. You want this well combined, no clumps of flour left to bite into.
Pour batter into mug and microwave for 1:30-2 minutes or until cooked through.
Top with whipped cream and toasted shredded coconut.
This is a light, single serve snack perfect for moms to enjoy in the evening. Relax with a little treat at the end of the school day.
