No Bake Peanut Butter Oatmeal Bars

My kids go through bread faster than I can buy it, or in the winter, faster than I can make it. Toast in the morning for breakfast (for one), sandwiches for lunch, for all of them. Every day it seems. Every once in awhile I like to make them something different to change things up. We have made delicious pizza muffins, which are always a hit. But these no bake peanut butter oatmeal bars are pretty darn good too.

I figured peanut butter is such a hit in my house, I go through those big 2kg things of Kraft peanut butter in two weeks, give or take.

I also go through the big club boxes of oatmeal from Costco every two weeks because two of my kids eat it like crazy for breakfast, so oatmeal should be a hit as well right?

What You Need:

  • 4 cups quick oats
  • 3/4 cup peanut butter
  • 4 tbsp canola oil
  • 1/2 cup maple syrup
  • 1/2 cup + 2 tbsp warm water
  • 1/4 cup chocolate chips, melted (optional)

How to make these No-Bake Peanut Butter Bars:

Mix everything together, minus the chocolate chips you plan to use them, but you don’t have to.

Mix it really well. Simple. My four year loved making this.

Then line a 8×8 pan with parchment paper to avoid it sticking to the bottom of the pan.

Press firmly into your pan. Melt your chocolate chips to drizzle or spread over the top. Nutella would probably work good here too instead. of the chocolate chips.

You can also use peanut butter substitutes for those with allergies, or for sending to school.

Refrigerate for at least an hour, longer if you can. These are not going to firm up like granola bars do, which I was kind of hoping for but you can still pick them up to eat them without too many crumbs.
