Baking Cinnamon Cookies

Everyone once in awhile I just need to either find something to entertain Brookland or put her down to nap a little earlier so Austin and I can do something together. One thing that it still just for Austin is baking. Brookland isn’t quite old enough to help. Today we made some of Austin’s favorite cookies – cinnamon cookies.

Simple, and get this: low in calories! Makes me feel a little less guilty as I am stuffing my face full of them.

  • 3 1/4 cups of flour
  • 1 cup of sugar
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 3/4 cup of oil
  • 3 eggs
  • 1 tsp vanilla

How to make Cinnamon Cookies

Cream sugar, eggs and oil together. Adding the vanilla, baking powder and cinnamon. Gradually add in the floor.

I admit, this is one cookie dough that I’m not sneaking pieces. It’s not the 3 eggs in it – I’ve eaten a lot of cookie dough without problems. This one doesn’t taste so good.

Don’t they look great? Can’t even tell that they are burnt, unless you look too close at the bottom edge. I just can not make great cookies, the only ones I don’t burn are our thumb print cookies. I also tend to get distracted by cleaning up our mess, and forget to set the timer which never helps.

These are great cookies for a picnic, they travel great, we take these on road trips for the kids to have for snacking.

Ingredients

  • 3 1/4 cups of flour
  • 1 cup of sugar
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 3/4 cup of oil
  • 3 eggs
  • 1 tsp vanilla

Instructions

  1. Cream sugar, eggs and oil together. Adding the vanilla, baking powder and cinnamon. Gradually add in the floor.
  2. Bake at 375 for 12-15 minutes.
