Breakfast is the most important meal of the day, or so I remember being drilled into my head as a child. With homeschoolers, there is first breakfast and second breakfast, I’m not sure which one is the most important but this healthy baked oatmeal with chocolate chips sure was a hit here, and so filling my kids didn’t come back for second breakfast.

Healthy Baked Oatmeal with Chocolate Chips
I doubled this recipe when I took pictures, I learned from the past to make more than enough to just feed them once, but to make enough at one to feed this house a couple of mornings in a row.
This recipe is really delicious, and healthier than a lot of the recipes we make here. Yes we used chocolate chips but you don’t have to, you could use other add-ins of your choice.
What You Need:
- 3 cups oats
- 1/2 cup light brown sugar
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- pinch nutmeg
- pinch cloves
- 2 large eggs
- 2 teaspoons vanilla
- 1 cup almond milk
- 1/4 cup coconut oil melted
- 1/2 cup applesauce
- 1/2 cup semi sweet chocolate chips (optional)
How to make Healthy Baked Oatmeal
Preheat oven to 350, I struggle preheating the oven, I don’t know why. Also grease a 9×9 pan with nonstick cooking spray, set aside for later. I used a 9×13 for my doubled recipe.

In a large bowl combine all of the dry ingredients: oats, brown sugar, baking powder, salt, cinnamon, nutmeg, and cloves. Stir to combine and then set aside while you mix the wet ingredients.
In a medium bowl combine the wet ingredients: eggs, vanilla, almond milk, coconut oil, and apple sauce mix well making sure to break those yolks. farm fresh egg yolks are made of tougher stuff.

Add the wet ingredients to the dry ingredients. I made a well in the center of my dry ingredients and poured in the wet ingredients. The best part of making oatmeal recipes in my opinion is how easily they come together with minimal mixing.

Fold in your chocolate chips. Or your choice of add-ins. Blueberries or dried fruit would be a delicious and healthy choice over chocolate chips as well. I only use chocolate chips because I need a little extra if I am going to convince myself and my kids to eat healthier.
Pour into the prepared pan and bake for 30-40 minutes or until the top is golden brown and is set.

Allow it to cool before slicing and serving. You and your kids are going to love this recipe.
I made a double recipe to have some for the next morning. Because when you are a busy homeschooler it is helpful to not worry about making something to feed your kids every single day.

- Remove from the oven and allow it to cool before slicing.
