Single Serve Baked Blueberry Oatmeal

Some mornings I want something different. I want to make a special treat for myself or for my kids and myself. This single serve baked blueberry oatmeal is perfect for cool, slower mornings that come with autumn.

I actually make this in bulk. I make one for each of us to have a single serving of our own. My kids love having their own individual dish, made just for them.

I know it seems like a lot of ingredients, but this is a filling, healthy breakfast. There was no asking for a second breakfast after I made these for my kids, a miracle!

What you need:

  • ¼ cup old fashioned oats
  • ⅛ teaspoon ground cinnamon
  • ⅛ teaspoon kosher salt
  • ¼ cup 1% milk (may also use almond or soy milk)
  • 1 tablespoon salted butter , divided
  • ¼ teaspoon vanilla extract
  • 1 tablespoon honey
  • 1 large egg
  • ¼ cup blueberries

How to Make Single Serve Baked Blueberry Oatmeal

Preheat your own to 350, and using half the butter, generously coat the inside of a small oven-safe dish or ramekin.

In one small bowl mix together the dry ingredients.

Melt the remaining 1/2 tbsp of butter.

In another bowl or small measuring cup, mix together the wet ingredients.

Add the blueberries to the bottom of your bowl. A single layer is best. You aren’t stuck with only using blueberries for this recipe you could use whatever fruits you have on hand. Blackberries, bananas, apples. Have fun and switch up your breakfast.

Sprinkle the oatmeal mixture over the blueberries.

Next, pour the wet ingredients over the oats and blueberries.

Bake for 35-45 minutes until cooked through. Let it sit for a few moments before serving, or eating, those blueberries are going to be hot.

I love that this recipe doesn’t call for sugar, but instead uses honey, and not that much of that even, but if you don’t have honey on hand you could use white sugar.
