This past weekend was beautiful! The weather was warm and sunny, a little windy as usual in Saskatchewan, but beautiful just the same. Come supper time on Sunday I was left trying to figure out what to make for supper and after searching Pinterest ended up with this garlic Parmesan chicken recipe that was so good, all my kids ate it and wanted more!
Garlic Parmesan Chicken

My kids basically love anything with cheese, and will eat anything made with cheese. They like my cheeseburger soup, despite telling me they don’t like soup.
They really love my chicken with Parmesan and bacon (and ranch dressing). You may have noticed we eat a lot of chicken… there is a better chance my darling children will eat supper if it is chicken.
I am a big fan of chicken, but so many of the recipes that have bread crumb coating where you are using an egg bath to make the crumbs stick. But that is not how we are doing it with this recipe.
In this recipe we are using EVOO (extra virgin olive oil) for our bath to help make the bread crumbs stick.
How to make Garlic Parmesan Chicken
- 1/2 cup grated Parmesan
- 1/2 cup bread crumbs
- 1 tsp basil
- 1 tbsp garlic powder
- 2 tbsp EVOO
- 3-4 chicken breasts
The steps to make this garlic Parmesan chicken breast:
Take a couple tablespoons of olive oil and a tablespoon of garlic powder and mix them together in a shallow bowl. I used 3 large chicken breast and still had oil left over so don’t use too much.
In your other dish you are going to mix together the bread crumbs, Parmesan cheese, and basil.
First pat your chicken breast dry with some paper towel. The oil and garlic powder will not stick to the chicken breast if it is wet.
Then coat both sides of the chicken breast in the oil/garlic. Repeat with the coating of bread crumbs and Parmesan cheese, make sure to cover your chicken really well.
Place in a greased 9X13 pan and bake in a pre-heated oven at 400 for 25 minutes or until your chicken is cooked through.
Using the oil and garlic instead of milk or egg wash really makes the garlic flavor pop! I was floored by how amazing it was. And like I said, every bite was eaten and my kids still wanted more.
Garlic Parmesan Chicken
A delicious, crispy coated chicken breast that is easy to make.
Ingredients
- 1/2 cup grated Parmesan
- 1/2 cup bread crumbs
- 1 tsp basil
- 1 tbsp garlic powder
- 2 tbsp EVOO
- 3-4 chicken breasts
Instructions
- Mix together the garlic powder and EVOO in a shallow dish.
- In your other dish you are going to mix together the remaining ingredients.
- First pat your chicken breast dry with some paper towel then dip both sides in the oil/garlic before coating with the bread crumbs, make sure to cover your chicken really well.
- Place in a greased 9X13 pan and bake at 400 for 25 minutes or until your chicken is cooked through.
