Lemon Garlic Chicken and veggies, the title alone makes me hungry. We are big garlic lovers here but I don’t often cook with lemon juice. If you’ve ever made something with lemon juice you know it leaves a nice tangy taste, perfect for boring vegetables. This slow cooker meal is easy and delicious.

How to make Slow Cooker Lemon Garlic Chicken and Veggies:

This is the best slow cooker lemon garlic chicken and veggies recipe! It is so easy to make and only requires a few simple ingredients. The chicken comes out so tender and juicy, and the vegetables are cooked to perfection.

This dish is perfect for a weeknight meal or entertaining guests.

What you need:

Start with your veggies. I used potatoes and carrots. Cut bit sized and spread over the bottom of your slow cooker, add your broth.

Place your chicken breasts on top of your veggies. Pour the lemon juice over top of the chicken and veggies.

Then mix all the spices together: minced garlic, thyme, rosemary, sage, and black pepper. Then add in the vinegar and oil.

Together creating a rub for your chicken.

I’m not a fan of touching raw meat of any kind, but this is worth it. Try to get the rub to stick to your chicken, so you get the most flavor out of it.

Place your chicken breasts on top of your veggies. Pour the lemon juice over top of the chicken and veggies.

If you want to make clean-up easy get some slow cooker liners. Cook your meal in liners and then toss them out when you are finished. Nothing gets easier than no dishes to clean.

Cook on high for 3-4 hrs or on low 6-8 hrs. There is nothing like a whole meal being cooked at once in your crockpot, waiting for you are the end of the day.

Ingredients

  • Chicken
  • 2 tbsp olive oil - we use EVOO
  • 1/4 cup lemon juice
  • 2 tsp minced garlic
  • 1/2 tsp thyme
  • 1/2 tsp rosemary
  • 1/2 tspsage
  • 1/2 tsp black pepper
  • 1 tsp balsamic vinegar
  • Salt to taste
  • 2 cups chicken broth

Instructions

  4. Cook. High 4-5 hrs. Low 6-8 hrs.
