Slow Cooker Lemon Garlic Chicken and Veggies

The day I made the Lemon Loaf Cake (lemon craving) I also made a lemon supper. Lemon Garlic Chicken (and veggies), the title alone makes me hungry. We are big garlic lovers here (no vampires will be getting in here that’s for sure) but I don’t often cook with lemon juice. If you’ve ever made something with lemon juice you know it leaves a nice tangy taste, perfect for boring vegetables.

What you need:

How to make Slow Cooker Lemon Garlic Chicken and Veggies:

Start with your veggies. I used potatoes and carrots. Cut bit sized and spread over the bottom of your slow cooker, add your broth.

Place your chicken breasts on top of your veggies. Pour the lemon juice over top of the chicken and veggies.

Then mix all the spices together: minced garlic, thyme, rosemary, sage and black pepper. Then add in the vinegar, and oil. Together creating a rub for your chicken.

I’m not a fan of touching raw meat of any kind, but this is worth it. Try to get the rub to stick to your chicken, so you get the most flavor out of it.

Place your chicken breasts on top of your veggies. Pour the lemon juice over top of the chicken and veggies.

Cook on high for 3-4 hrs or on low 6-8 hrs. There is nothing like a whole meal being cooked at once in your crock pot, waiting for you are the end of the day.

Ingredients

  • Chicken
  • 2 tbsp olive oil - we use EVOO
  • 1/4 cup lemon juice
  • 2 tsp minced garlic
  • 1/2 tsp thyme
  • 1/2 tsp rosemary
  • 1/2 tspsage
  • 1/2 tsp black pepper
  • 1 tsp balsamic vinegar
  • Salt to taste
  • 2 cups chicken broth

Instructions

  2. Mix all the spices, vinegar, and oil together creating a rub to rub over your chicken.
  3. Place your chicken breasts on top of your veggies. Pour the lemon juice over top of the chicken and veggies.
  4. Cook. High 4-5 hrs. Low 6-8 hrs.
