As I type this, I am smelling them. Oh why didn’t I exercise when the girls went to bed, why?! Healthy and cookies don’t often go together and include delicious, but these are different. Simple, delicious, and healthy peanut butter cookies what more can I say? I just hope you all enjoy!
Peanut Butter & Oatmeal Cookies

Head to your cupboard or your pantry, where ever you keep your baking ingredients. Do you have peanut butter? Oats (I use quick oats)? Baking soda? Brown sugar? Now, what about an egg?
- 1/2 cup creamy peanut butter
- 1/2 cup brown sugar
- 1 egg
- 1/2 tsp baking soda
- 1 1/4 cups oats

Mix it all together – did I mention simple? 5 ingredients. That’s it. Great for making with your kids.
It took me 10 minutes to get everything out of the cupboards, measured, mixed and into the oven. Little to no spreading, so fill up that cookie sheet! Below is an actual picture of my cookie sheet. Not one cookie touched another nor the edge of the cookie sheet.
Bake at 350 for 12-15 minutes. Golden on the bottom, still looking soft on the top.
So why did I make these cookies 8 o’clock at night after not exercising? I wanted chocolate. BAD. Yeah I know I didn’t list anything chocolate or cocoa in the ingredient list. I did add it to the second batch going in to oven as a second thought.
To be 100% honest, I liked them better without the chocolate chips. Shocking I know.
