Easy Slow Cooker Italian Chicken

Do you happen to have a bottle of Italian dressing in your cupboard or fridge? That’s how this recipe came to be. Found a bottle of it and couldn’t remember why or even when I bought it. But a slow cooker and some chicken, and we had a delicious slow cooker Italian chicken dinner.

What you need:

  • chicken breasts one per person
  • 1 cup of Italian dressing
  • 1/2 cup mozzarella cheese
  • 4 carrots, diced
  • 5 potatoes, diced

If you want to make clean-up easy get some slow cooker liners. Cook your meal in liners and then toss them out when you are finished. Nothing gets easier than no dishes to clean.

How to make Slow Cooker Italian Chicken

Place your chicken breast in the bottom of your slow cooker, covered it with half of the Italian dressing (1/2 a cup), and add half your cheese, roughly 1/4 cup.

Add your diced carrots and potatoes on top of your chicken and cover with your remaining Italian dressing.

Cover, and cook on low for 6-8 hours or on high for 3-4. When cooking root vegetables in my slow cooker I like to cook on low for a longer time.

Occasionally they won’t cook through on high in a shorter amount of time, I perfer to use the slow cooker setting for root vegetables. Plus, I can get supper started at breakfast time without having to stop in the middle of the morning, our school day, to start supper.

About 30 minutes before your meal is finished add the rest of your cheese on top and recover.

The pictures I have don’t do this meal justice. I really need to redo them. I couldn’t get enough of the vegetables, they tasted so good, as did the chicken, but, oh, my, those potatoes and carrots.

Add ins: You may want to add some bacon bits to this meal when you add the remaining cheese, or even when you serve it. Frenchy’s Crispy Fried Onions are also amazing on top when serving.

  1. Place chicken in the bottom of your slow cooker.
  2. Pour dressing over chicken
  3. Top with shredded cheese
